Kale, Quinoa & Black Bean Soup


I made this soup a few days ago and it was a big hit at my house! I am not a skilled chef, but this soup was very easy to whip up and it really did taste delicious. Plus, it includes a lot of healthy super foods! Here are the ingredients:

*1800 mL vegetable stock (Rachel Ray's tastes great)
*1 can black beans
*1 1/2 cups quinoa (Ancient Harvest)
*4-5 cups kale
*1 large tomato, diced
*1 large onion, chopped
*5 cloves garlic, minced
*1 tablespoon extra virgin olive oil
*1 tsp. thyme
*1 tsp. ground sage
*1/2 tsp. black pepper
*1 tsp sea salt


Step 1
Heat olive oil in the pot with the onion & garlic until transparent












Step 2
Add vegetable stock, tomato, and spices to pot and boil for 20 minutes









Step 3
Add kale and black beans and simmer for 10 minutes












Step 4
Add cooked quinoa to the pot and boil for 2-3 minutes












Step 5
Serve and enjoy! And watch your family's delight as they try it - like I said, it was a big hit here at home!
